Jalapeno Cheddar Grilled Cheese

We had 5 nice ripe tomatoes sitting on the window sill today, and they were begging to have something done with them (before they rotted). I turned them into a nice home made tomato soup to go with our grilled cheese sandwiches. That soup was really the star here. The sandwich was fairly plain, just having grated jalapeno cheddar cheese on it (which was quite mild), which melted nicely.

The soup started with some olive oil in which i lightly cooked some chopped shallot and garlic. Then i added the chopped tomatoes (which i scored, blanched, and removed the skins before chopping) and cooked it for 20 minutes. Near the end i added some more olive oil and balsamic vinegar. It then went into the blender (in 2 batches) and got nice and smooth. Before it went back into the pot i made a little roux out of butter and flour to thicken it up. Some salt and pepper finished it off.
