Breakfast Grilled Cheese

Take 2, this time with more breakfast. And with more Allison (last time she was away visiting friends). Our sandwiches had fried eggs on top (left just the perfect amount of over-easy to ensure it was still gooey without being all over the place) along with lots of cheddar cheese. Mine had bacon and hers had breakfast sausage, split in half lengthwise.

Extra Cheesy Grilled Cheese

Tonight was a plain grilled cheese night, but with extra cheddar cheese and tomato soup.


Pigs-in-a-Blanket Grilled Cheese

Today is National Pigs-in-a-Blank day. No, seriously. So anyway, that's what we had for our grilled cheese. I picked up a large package of crescent rolls from the grocery store and rolled them out onto a baking sheet and baked them off. I made sure that the two triangles were connected still, and pinched it together a little, so that it formed a rectangle. This made an excellent bread for the sandwich, kind of like a flatbread, but nice and flaky. On top of that went a good amount of cheddar cheese.

Cobb Salad Grilled Cheese

A Cobb Salad typically contains lettuce of some sort, tomato, bacon, chicken breast, hard boiled eggs, avocado, and blue cheese. Our sandwiches had all of that, plus shredded sharp white cheddar, assembled on slices of hearty multigrain loaf.

Monte Cristo Grilled Cheese

This week's grilled cheese was a Monte Cristo. Ham and swiss cheese were assembled on the sandwich and then the entire thing was dunked in a light flour, egg, and milk based batter and then grilled up. It should have been more crispy than it was, not sure what went wrong there. I think the griddle wasn't hot enough, and it needed far more oil. I will do it again one day but I'll do it in a (potentially cast iron) pan on the stove with a small layer of oil instead of on the griddle. I think i'll use buttermilk too.

Gouda and Roast Beef Grilled Cheese

I took a quick trip to the grocery store and picked up some nice sliced roast beef and some premium spiced gouda cheese (i think it had fennel seeds in it). Heated the beef up a bit on the griddle and layered it into some Italian style multigrain bread. It was extremely melty and delicious with chipotle dipping sauce and ranch dipping sauce (aka salad dressing).

Tomato and Turkey Grilled Cheese

I made a loaf of bread the other day with the intention of using it for these sandwiches, but it nearly didn't make it. Fortunately there was just enough left. We purchased a full turkey breast at the store the other day, roasted it in the oven, and then sliced it nice and thin on the deli slicer. It was accompanied on the sandwich by the remaining Jarlsberg from last week and a good amount of both yellow and white cheddar. A thin layer of tomato was added after the sandwich was grilled (by pulling it apart), which kept the tomato nice and fresh.

Mushroom, Swiss and Salami Grilled Cheese

I had the task of finding something interesting and different, so i browsed around at the grocery store until i found some nice Jarlsberg cheese (very much like swiss cheese) and a package of spanish style salami's (one was Chorizo and i don't remember what the other one was). I fried up the mushrooms in a pan along with some garlic and butter, and then also lightly fried the salami slices. Bread was a Bavarian multigrain. One sandwich got one salami and the other was on the second. They were very tasty, and dipped in chipotle sauce and ranch.

Three Cheese Grilled Cheese Sandwich

I made some fresh multigrain bread the other day and Allison went to the store to pick up some fillings. We ended up making a three cheese sandwich with old cheddar, mozzarella, and goat cheese. It was nice and gooey as the cheeses were shredded (well, the goat cheese was broken up, it's not exactly shred-able). Dips of choice were ketchup and chipotle mayo dip sauce.

Turkey and Goat Cheese Grilled Cheese

Allison came up with a winner this time, roast turkey, tomato, and goat cheese on multigrain. Fantastic combination, super melty. I had a little baconnaise on mine. I bought some turkey breast and thighs at the store and roasted them in the oven for an hour and sliced that up, and also thinly sliced a plum tomato, both of which were layered in the sandwich, with goat cheese on each side. We also had a chipotle dip sauce i picked up at the store (mayo based, i think), which was the perfect thing to spice it up.
