Chicken Quesadilla Grilled Cheese

Cheese (and possibly other things) between bread that is grilled or griddled is what defines a grilled cheese sandwich, so technically a quesadilla is a grilled cheese sandwich. It just happens to be using a flour tortilla instead of a traditionally sliced loaf of bread.
Ours also had some re-fried beans, roasted chicken, green chilies, and guacamole in it. Served with salsa and sour cream for dipping (or as i mostly did, spoon it on top).

Pulled Pork Grilled Cheese

I had some pulled pork left over in the freezer from a few weeks ago and decided at the last minute that it would make an excellent grilled cheese sandwich. I was not wrong. We decided that one sandwich would be made with cheddar cheese and one with cream cheese, and that was amazing. We used ranch dressing and bbq sauce (separately, not mixed) to dip in, which was also fantastic.

Ham and Mozzarella Grilled Cheese

Today we went pretty simple, ham and mozzarella on brown bread. We had gone to Costco on the weekend and picked up some large packages (they don't do small at Costco) of honey ham, fairly good mozzarella and standard brown bread and decided that all of this needed to go together. Partially because it was going to be delicious and partially because we have a lot of it and need to use it up. Once grilled the cheese was extra gooey and stringy, which was really quite nice.

Roast Beef on Weck Grilled Cheese

This grilled cheese sandwich was inspired by a Roast Beef on Weck sandwich that I saw on TV a while ago. Weck is a short form of Kummelweck, which is a type of kaiser bun that is topped with kosher salt and caraway. I couldn't find those at my local grocery store, so instead I got some caraway seeds, toasted them in a frying pan, and then pressed them (and salt and pepper) into a small beef sirloin roast, seared it, and then put it in the oven (with some beef stock, carrots, shallots and garlic).

Solo Grilled Cheese

Today I ate grilled cheese on my own. Allison was quite under the weather and opted for just soup. I didn't feel like doing anything fancy so it was just cheddar cheese, butter, and bread.


Grilled Cheese with Tomato Soup

Today we decided we just wanted a plain old grilled cheese. Nothing fancy, just cheddar and and bread. Ok, the bread was 12-grain. And maybe some leftover pepperoni from the pizza we made on the weekend got in there. But that's all. And some tomato soup.

Apple and Cheddar Grilled Cheese

One of the many fine ideas that Allison has come up with was today's grilled cheese. This was an apple and cheddar on cinnamon bread sandwich. The apple was a rather large granny smith apple, sliced thin (although next time i would slice it thick, it tended to slide out, and was hard to bite through the multiple layers). The bread, after much searching around the city for a cinnamon bread that does NOT contain raisins (try it, you can't find it easily), ended up being cinnamon rolls, complete with the frosted sugar on top.

Goat Cheese with Smoked Almonds and Tomato Salsa Grilled Cheese

This sandwich was an inspiration from our recent visit to The Keg where we had an appetizer of goat cheese topped with chopped almonds and served together with some fresh tomato salsa. A few days previous I had smoked some almonds when i was doing bbq, which were then chopped up. Goat cheese was spread on both sides of some fresh Italian bread, which was then topped with the almonds, and a fresh salsa (not from a jar or can). This was a very gooey and tasty sandwich.

Cheeseburger Grilled Cheese

Today we decided that a cheeseburger was on the menu. But it was Grilled Cheese Day. Why not have both? So we did. I made some thin burger patties from ground beef and cooked them up first. We then assembled them on the griddle, open faced, and let the bread get toasty. Once that was done, and the cheese was melted, we piled on some lettuce and tomato and closed them up for a final press.

Turkey and Cranberry Grilled Cheese

We moved this week's grilled cheese a few days out due to Christmas. We wanted turkey on the sandwich, but too close not to Christmas as to avoid turkey overload. This sandwich has sliced turkey (which was then cut up and grilled), whole cranberries and sauce (from a can) and super soft brie cheese, sliced thin (yup, you can slice it using a wire cutter, if you are careful).
