Mozzarella Grilled Cheese

Today, our first day back after our Honeymoon in Hawaii, we decided not to get too fancy and just have something plain. So we still had some quite good mozzarella in the fridge which went on some plain brown bread. It was accompanied by Zoodles.

Pork Schnitzel with Apple Grilled Cheese

This was a pretty great experiment. We had purchased some centre cut pork chops and flattened them out using a tenderizer. I breaded them using flour, eggs, and panko, and then fried them in a cast iron skillet in a half inch or so of oil (did this outside on the side burner of the bbq to avoid having the house stink like oil for the next few days). We put these on the sandwich together with some apples that had been cut up and cooked down a little in a pan, along with some good quality Mozzarella cheese. This was an amazing sandwich, would make it again any time.

Sampler Platter Grilled Cheeses

This week we did a little departure and created 4 separate grilled cheese sandwiches. It was amazing. This came as a direct result of being given a Grilled Cheese creator basket as a wedding shower present (thanks Ginger!). Going right to left (i know that seems backwards, but keep with me here, there's a reason) the first on the right was mushroom and Swiss, next was a pizza grilled cheese which had mozzarella, pepperoni, tomato sauce, and some more mushrooms. Third from the right was jalapenos, cream cheese, and Monterrey Jack.

Basil, Tomato, and Mozzarella Grilled Cheese

Tonight was a repeat of a classic, Basil, Tomato, and Mozzarella. Made this with basil from my herb garden in my yard. Too bad the tomatoes aren't ready. The plants aren't even a foot tall yet! Some nice soft Italian bread rounded out these sandwiches. I need to remember to dice the basil though, or it just comes out in one bite.

Three Cheese Grilled Cheese Sandwich

I made some fresh multigrain bread the other day and Allison went to the store to pick up some fillings. We ended up making a three cheese sandwich with old cheddar, mozzarella, and goat cheese. It was nice and gooey as the cheeses were shredded (well, the goat cheese was broken up, it's not exactly shred-able). Dips of choice were ketchup and chipotle mayo dip sauce.

Ham and Mozzarella Grilled Cheese

Today we went pretty simple, ham and mozzarella on brown bread. We had gone to Costco on the weekend and picked up some large packages (they don't do small at Costco) of honey ham, fairly good mozzarella and standard brown bread and decided that all of this needed to go together. Partially because it was going to be delicious and partially because we have a lot of it and need to use it up. Once grilled the cheese was extra gooey and stringy, which was really quite nice.

Roast Beef on Weck Grilled Cheese

This grilled cheese sandwich was inspired by a Roast Beef on Weck sandwich that I saw on TV a while ago. Weck is a short form of Kummelweck, which is a type of kaiser bun that is topped with kosher salt and caraway. I couldn't find those at my local grocery store, so instead I got some caraway seeds, toasted them in a frying pan, and then pressed them (and salt and pepper) into a small beef sirloin roast, seared it, and then put it in the oven (with some beef stock, carrots, shallots and garlic).

Breaded Chicken Grilled Cheese

This week's grilled cheese contained a nice piece of breaded chicken, fried in a pan with some oil and butter, along with some home made tomato sauce and mozzarella cheese.

Four-Cheese Cheese-Steak Grilled Cheese

After a quick run through the grocery store looking for inspiration and ingredients I decided tonight's sandwich would be a four-cheese cheese-steak grilled cheese. I picked up some fast-fry rib-eye steaks, some extra cheese, and some nice soft Italian bread and headed home. I shredded and mixed together cheddar, mozzarella, and Monterrey Jack cheeses and then added a good size amount of cream cheese to turn it into a bit of a paste.

Three-Cheese Grilled Cheese

Today's sandwich was a pretty basic one, but mighty tasty. We put cheddar, mozzarella and swiss on some nice soft Italian bread. We were out of tomato soup though, so some mushroom soup was made.
